Jingyang, in Shaanxi province, where Fu tea is said to have originated, has been perfecting this craft for around six centuries, under the specific temperature and oxygen conditions that favour golden flower development.

Jingyang Fu teas often use heimaocha (raw material) from other regions, unlike Anhua which almost always uses local tea. The raw material for this brick was harvested in Anhua, Hunan, to a first-grade standard (one bud and two leaves), then went through shaqing (kill-green) and initial drying. It was then transported to Jingyang, where it was steamed, wodui (pile-fermented) for two days, inoculated with the brand's own golden flower culture, and hand-pressed into bricks before 45 days of aging in dedicated chambers. Jingyang, in Shaanxi province, where Fu tea is said to have originated, has been perfecting this craft for around six centuries.

Jingyang Fu teas often use heimaocha (raw material) from other regions. The raw material for this brick was harvested and processed into Shoumei in Fuding, Fujian, renowned for its white teas. The Shoumei standard is one bud and two/three leaves. It was then transported to Jingyang, where it was inoculated with the brand's own golden flower culture, and hand-pressed into bricks before 45 days of aging in dedicated chambers. Entirely handmade.

The story of this tea with Tea Drunk Monkeys starts in Xi'an, where Efim happened to meet a Jingyang native who produces and sells his teas locally. It is also the territory of the Youle (Jinuo) people, the last of China's 56 officially recognised ethnic minority groups to be identified, living almost exclusively on this mountain.

In winter 2024, we had the chance to meet one: a man who guided us through the jungle casually listing the countless ways local wildlife and flora could kill us. He turned out to be the last hunter of his lineage — a practice abandoned after China began restricting hunting in the late 1990s. He welcomed us into his home in Baduo village with remarkable generosity and charisma, never stopping surprising us. That is where we discovered he also tends an heirloom plantation and produces a small amount of tea each spring. His trees range from 50 years, young for Yunnan, to gushu (ancient trees), with a trunk of around 70cm circumference, probably 300 years or more. He harvested old and young trees together which is called huncai (mixed picking).

Suancha (sour tea) is something we have only encountered in Nuogang so far. Our producer told us he adapted a recipe from the Bulang people of a neighbouring village, who traditionally pound sour tea with salt, garlic and chilli and serve it with rice. Yes, like a condiment, a bit like sauerkraut. Seems like he twisted the recipe into something you drink. The process follows standard raw puerh steps: withering, rolling… but instead of being sun-dried at the end, the leaves are packed into bamboo tubes or clay jars, nothing added, and left to ferment anaerobically for one season to a year.
