GREEN TEA
aka « lucha / green tea »
Green tea is a fresh and energizing tea made from young leaves and buds. Spring harvests are often the most prized. It comes from almost all tea-producing regions of China. It is best enjoyed fresh rather than aged.

Red (Black) Tea
aka « black tea »
Highly oxidized, produced from buds and young leaves, red teas offer a variety of profiles: malt, honey, cocoa, smoky, floral. They are best plain, without milk or sugar. They even surprise fans of English-style "black teas".

Oolong tea
aka « Oolong tea »
This is the broadest category with the most complex manufacturing process. The leaves are mainly picked without buds. The producer's expertise is the key element in the notes the tea will yield. The most renowned Wulongs come from Fujian, Guangdong, and Taiwan.

PU-ERH TEA
aka « Pu-erh tea »
They are produced in Yunnan from ancestral large-leaf tea trees. The age of the trees is the most important factor: the older the tea tree, the more sought-after its leaves. It can be drunk young or after maturation. They are divided into two production methods: raw (sheng) or cooked (shou). This will result in two radically different profiles.

WHITE TEA
aka « white tea / bái chá »
These are the least processed teas. They are picked, dried, and that's it. Behind this simplicity lies great mastery of drying. Produced in Fujian and Yunnan, they can be enjoyed fresh or aged, depending on your mood. White teas from Fuding are highly sought after and often counterfeited.

Dark Tea
aka « dark tea »
Post-fermented teas (HeiCha) date back to the Ming and Qing dynasties. Fermentation is achieved by piling the leaves in a humid environment (WoDui). They are produced in the provinces of Sichuan, Anhui, Hubei, Hunan, Shaanxi, and Guangxi.
